When I started my blog 6 years ago today, my main focus was to make public all the recipes I shared in my leisure classes, family clubs and after school clubs for more than 10 years.
My classes at Perth College were so popular that it needed to be booked months in advance to secure a space, and I was very sad when I had to give up all my classes to pursue my career and secondary teacher.
After 6 years lots has changed in my life and my family and my full-time job led me to abandon my wee blog from time to time, but I hope this will change as I have now realised that I want this blog to be more a tool for my kids to remember and share some of our favourite recipes.
To celebrate this anniversary in style, I’m going to share this simple dessert that my kids adore, and it’s so easy to make, Panna Cotta. The main secret to a delicious panna cotta is the freshest and best ingredients you can find, in particular the choice of which cream and vanilla you are using can have a huge impact on the flavour of this dessert.
Ingredients
- 300ml single cream
- 200ml milk
- 80g sugar
- 5mls vanilla extract
- 4 gelatine leaves or 1 sachet (check the instruction on the packet to ensure it’s enough to set 500mls or 1 pint of liquid)
Instructions
- Add all the ingredients except the gelatine, to a pot and heat up gently until the sugar had dissolved and the liquid is hot but not boiling.
- If you are using the gelatine sheets, you need to soak them in a bowl full of cold water for about 5 minutes or until they are soft. After 5 minutes remove the gelatine from the bowl and squeeze all the excess water out. Add the soft gelatine to the pot and stir it until it’s all dissolved.
- If you are using a gelatine sachet, sprinkle it onto the hot liquid and let it dissolve. I sometimes find it quite difficult to dissolve so I pass the liquid through a sieve to remove any lumps.
- After the gelatine has dissolved, pour the liquid in 4 containers and leave it to cool for a little bit before let it set in the fridge.
